Whats the ratio of a pumpkin's circumference to it's diameter?

Social distancing continues and so does the desire to bake everything in the kitchen pantry! Luckily my sister has the most AMAZING recipes for you to try and I wanted to share them with you all!

Little pumpkin tarts are super easy to make and the ingredients are commonly found in everyone's pantry! I used individual tart cups for this recipe however you can use mason jar lids or muffin cups, as long as you use non-stick spray on them they will work just as well!

The tart shells don't have to look perfect by any means! One disclosure, a little dough goes a long way! If you're the type of person that prefers a decent amount of tart shell to pumpkin pie, your tart cups should look similar to mine. If you prefer to have the minimal tart shell, then use just enough dough to coat your cups without having "see-through" areas. As you're shaping the tarts the dough tends to get warm from body heat, that is why I'll add in an extra step to place my tarts in the fridge for about 10 minutes to help the dough hold it's shaping and it also gives me time to mix the pumpkin pie filling!

When filling the cups with the pumpkin pie filling, fill each cup to the brim because they won't rise (so you can be generous)! Yes, I had extra dough and ran out of mini tart cups so I decided to make a big tart too (the world is your oyster!)

.They may bubble a bit while baking (^ see above) but that's nothing to worry about, they will settle once taken out of the oven. In terms of the pies being fully cooked, you want the crust to be a nice golden brown and the middle should look solidified. If you're a nervous baker by all means you can keep them in the oven till they crack the slightest bit but no longer or else they will be overdone. The best indicator is the golden crust!

The most time-consuming aspect about making pumpkin tarts will be pressing the dough into the tart cups, have patience with this. I promise your time and attention will be worth it in the end! The rest of the steps take only a couple minutes, there's a light at the end of the tunnel and it has beautiful pumpkin tarts waiting for you!

Hope you are all getting through this pandemic with lots of baking in your stomachs!
