Banana bread has always been one of my favorite recipes to bake for multiple reasons, its delicious, simple, and everyone loves it. I used to jump from different banana bread recipes because I found the ones I was using turned out to be too dry.
Then I got to thinking, there has to be a secret ingredient to delicious moist banana bread... turns out its greek yogurt! This recipe was originally used with sour cream (which can be used interchangeably with greek yogurt), however, while in quarantine, I decided let's see what I have in my fridge. When I found coconut flavored greek yogurt, I knew it would work perfectly, and even better, coconut flakes must be added as well.
Hands down, best decision I've made all week.
